Mushroom caviar with carrots, onions, garlic and tomatoes

Step-by-step preparation
STEP 1
We take the necessary set of products for our dish. I thank my friend for this recipe - she was the one who told me how to prepare mushroom caviar for the winter with carrots, onions, garlic and tomatoes.
STEP 2
Let's start preparing the mushrooms. We clean them with mine. Next, pour cold water into the pan, add mushrooms, salt, bring to a boil, skim off the foam and cook for 30-40 minutes.
STEP 3
Meanwhile, wash and peel the carrots, then grate them on a coarse grater.
STEP 4
Fry the carrots in a heated frying pan with the addition of two tablespoons of vegetable oil until half cooked while stirring - this is about 10 minutes, the heat is moderate. Peel the onion and chop finely. Add carrots to the pan.
STEP 5
Cut the tomato into cubes and also add to the vegetable mixture.
STEP 6
We also send garlic chopped with a knife or pressed through a press there, salt and season with pepper to your taste. Cook for 7 minutes while stirring. Remove the prepared vegetable mixture from the pan and transfer it to another bowl.
STEP 7
Heat the remaining oil in a frying pan and fry the mushrooms in it, which need to be removed from the broth 10 minutes before and placed in a colander so that excess liquid drains from them and there are no water splashes during frying.
STEP 8
Grind the fried and cooled mushrooms using a meat grinder or blender.
STEP 9
We do the same with fried vegetables: grind them into a pulp in a convenient way.
STEP 10
Mix the mixture of mushrooms and vegetables in a deep container. The caviar is ready. It can be eaten immediately or used for long-term storage. To do this, place the still hot caviar into prepared sterilized jars and seal them with sterilized lids. Then turn it over, wrap it up and let it cool completely until the morning. We store it in the basement. Or you can make two or three times more caviar, so that you have enough to eat right away and still have some left over for preservation.
