STEP 1

How to bake muffins in the microwave? Prepare all the necessary ingredients. Take the highest grade flour. Eggs - C1 or C0. The oil should be odorless. If you plan to use vanilla sugar instead of vanillin, use 10 times the amount indicated. Any jam will do, choose according to your taste. Remove the jam and egg from the refrigerator 1-1.5 hours before. To make the dough more successful, they should be at room temperature.
STEP 2

Take a deep bowl in which it will be convenient to mix dry and liquid ingredients. Sift half the flour into it to weed out small debris and saturate it with oxygen. Wash the egg with soap and dry with a towel or napkin. Beat it in a separate container with vanilla and a pinch of salt. There is no need to whip until foam appears. Adding salt improves the taste and simplifies the whipping process. Add the beaten egg to the flour.
STEP 3

Add jam (I used apricot) and butter, mix thoroughly. Since the properties of flour of the same type, but from different manufacturers, differ, to obtain the desired consistency, add the remaining flour in small portions. STEP 4

STEP 5

Use microwave-safe muffin and cupcake tins. Silicone molds do not need to be greased; for molds made of other materials, grease the bottom and sides with oil. Fill them 3/4 full to leave room for the dough to rise. Microwave for 2.5-3 minutes at 800 W. Time and power may vary depending on your microwave. STEP 6

The finished muffins will increase in volume by 1.5 times. Poke them with a wooden toothpick or skewer in several places. If the dough does not stick to it, then the muffins are ready. Bon appetit!
