STEP 1

How to bake muffins in paper tins? Prepare all ingredients. Use premium wheat flour, C1 category eggs, kefir can be replaced with homemade yogurt, you can choose any jam: cherry, strawberry, apricot, orange and others.
STEP 2

In the bowl in which you will knead the dough, sift the wheat flour along with the baking powder through a sieve. By sifting, the flour will be filled with oxygen, which will make the dough more tender and soft, and will also remove unnecessary impurities and debris that may be in this product. STEP 3

Take a smaller container and combine kefir, chicken egg and vegetable oil in it, mix. There is no need to beat the mass, just mix everything until smooth.
STEP 4

Add the resulting liquid mass into the bowl with the dry mixture. Using a wooden spoon, stir the mixture with quick movements. You need to knead quickly but carefully so that excess gluten does not form in the dough. There is no need to make the dough smooth, because then the finished muffins will turn out hard. STEP 5

Place soft paper molds in a mold with round dimples, this will give the muffins their shape. If you use hard paper forms, then you do not need to strengthen them additionally. Place some dough into paper molds. The dough should completely cover the bottom of the molds.
STEP 6

Make indentations in the center of the dough, you can use a spoon, or you can just use your finger dipped in water. Place jam in the cavity (I used orange).
STEP 7

Cover the top of the jam again with dough almost flush with the paper molds.
STEP 8

STEP 9

Remove the finished muffins from the oven, let them cool slightly, decorate to your liking and serve with tea.
