STEP 1
How to make zrazy from minced meat with egg? Prepare all the necessary ingredients. Use minced meat from any meat you like. If you buy ready-made, take high-quality without additives. But it’s better to make the minced meat yourself. I have pork and chicken. Eggs are suitable C1 or C0, refined oil. Use the greens at your discretion; any available will do. I have onions and parsley.
STEP 2
Boil the eggs. How to boil eggs? Wash the eggs with soap, carefully place 3 eggs in a small saucepan and cover with cold water. Set aside one egg for now; you will need it later (step 9). Bring to a boil over high heat, reduce heat to medium and simmer for 10 minutes. Pour cold water over the eggs to make them easier to peel and cool completely.
STEP 3
Cut the loaf into slices, pour milk over it. I replace milk with water because I don’t like its taste in cutlets. Leave for 5 minutes, then drain the milk and squeeze the loaf thoroughly. If there is a lot of liquid left, the minced meat will spread and you will not be able to form it immediately. Grind the soggy loaf with your hand or a fork into a homogeneous paste.
STEP 4
Peel the onion, rinse and cut into small cubes. This way it will cook faster.
STEP 5
Peel the eggs. Cut into pieces no larger than 1x1 cm.
STEP 6
Wash the greens under running water and dry on a towel or napkin. Trim off the tough parts and chop the greens with a knife.
STEP 7
To fry the onions, take a frying pan. Heat it over medium heat, carefully so as not to burn yourself, pour a tablespoon of vegetable oil onto it and add chopped onion. Cook over medium heat, stirring occasionally, about 2 minutes. The onion should become softer and begin to turn golden. Cool completely.
STEP 8
In a deep bowl, mix chopped eggs, herbs and onions. Add a little salt and stir until smooth. The filling is ready.
STEP 9
Place the minced meat, loaf and break the remaining egg into a deep bowl in which it is convenient to mix the ingredients.
STEP 10
Salt and knead the minced meat until smooth. The longer the minced meat is kneaded, the easier it will be to work with it later. It took me 10 minutes.
STEP 11
Proceed to the formation of zraz. This amount of products makes 8 pieces. I made 6 large ones and steamed 4 smaller ones. Therefore, they fit in a 20x30 cm pan. To bake them all at once, take the largest baking sheet. Grease it with oil. Take a palm full of minced meat, roll it into a ball and knead it into a flat cake about 1 cm thick. Place a level tablespoon of filling in the center.
STEP 12
Carefully lifting the edges of the minced meat, seal the filling into the cutlet so that it all remains inside. Place seam side down on a baking sheet. Form the remaining zrazy, placing it on a baking sheet. Bake in the oven at 190 degrees for about 40 minutes. Cooking times may vary depending on the capabilities of your oven. Cool the finished zrazy a little and serve. Bon appetit!
