    Let's prepare the ingredients for the cutlets. It is better to take young and fresh beef, tenderloin. We wash the meat under running water, dry it and cut it into small pieces.

    We pass the meat through a meat grinder. Peel the onions and cut them into pieces that will fit freely into the meat grinder. And we pass it through a meat grinder together with the beef. Beef meat is quite dry, and to make the cutlets juicier and more tender, the crumb of white bread soaked in milk is added to the minced meat.

    Combine the ingredients in a deep bowl, add salt and ground black pepper to taste. Stir until the mixture is homogeneous in consistency; it is better to knead the minced meat for the cutlets by hand. Beat in the chicken egg and mix. You don’t have to add it if you wish, but it still makes the cutlets denser and tastier.

    With hands moistened with water, form small cutlets from the minced meat. To give them a nice light blush on the outside, roll them in wheat flour. If you want the cutlets to be healthier and less caloric, and the appearance of the cutlets is not particularly important, then you don’t have to coat them in flour.

    Place in a baking dish greased with vegetable oil. To avoid washing the pan after baking the cutlets, you can cover it with parchment and grease it with butter. Place the cutlets in an oven preheated to 180 degrees for 30 minutes. After 20 minutes of baking, the cutlets can be turned over so that they brown evenly on both sides.
