STEP 1

Let's prepare the ingredients according to the list. You can use any meat, but a more tasty and juicy dish is obtained with pork; it is better to take the upper part of the carcass, where there is less muscle tissue and the flesh is tender. Wash the meat thoroughly, dry it and cut it into cubes or cubes.
STEP 2

You need to use large onions or a couple of small ones, because they are the basis of the gravy. We peel the onions and cut half of them into large pieces or halves of rings, and the second part – finely. Pour vegetable oil into the frying pan. Turn on the heat, when the oil is hot enough, place the onions on it. Fry the onion, stirring with a spatula, for literally five minutes, so that it becomes transparent and releases the juice.
STEP 3

Then add the cooked meat to the onions in the frying pan, mix and continue to fry them together over tar fire for about 10 minutes, stirring with a spatula so that the meat gets a crust on the outside, which will allow the juice to remain inside and the meat to be juicy and tender in the finished dish. Fry for about 10 minutes, no more.
STEP 4

In a separate container, mix the tomato paste with water, I used homemade tomato sauce, so I needed a little less water. Pour the liquid into the pan with the meat. Let the liquid boil, reduce the heat to low and simmer the meat for about 20 minutes.
STEP 5

At this stage, add peppercorns, bay leaves, and, if desired, any other seasoning for meat. But you don’t need to add salt right away, otherwise the meat will release juice and by the end of cooking it will become dry and tough.
STEP 6

In a separate container, stir one or two tablespoons of wheat flour in a quarter glass of water, the amount of flour depends on the desired thickness of the gravy. Stir until the flour is completely dispersed and there are no lumps left. Pour the prepared mixture into the frying pan with the meat, add salt to taste and continue to simmer, stirring constantly with a spatula, until the sauce thickens. Turn off the fire. The dish is ready. Serve with any side dish to your taste. Bon appetit!
