These are frozen mussels and the composition for the marinade - soy sauce, balsamic vinegar, vegetable oil, dried garlic, a mixture of herbs, ground hot pepper, onions. First, the mussels need to be marinated.

    Thaw frozen mussels in a bowl at room temperature.

    Place defrosted mussels in cold water, put on fire and cook for 2 minutes after boiling. Use a slotted spoon to skim off any foam that has formed. Place the finished mussels in a colander and let cool. I got 170 grams of the finished product.

    While the mussels are cooling, prepare the marinade. In a separate bowl, mix balsamic vinegar, soy sauce, vegetable oil, dried garlic, a mixture of herbs to your taste, ground hot pepper (I used a mixture of four peppers)

    Cut the onion into half rings and mince it a little so that it releases the juice.

    Add the marinade and chopped onion to the cooled mussels, mix everything well, cover with cling film and marinate in the refrigerator for 10 - 12 hours. You can marinate in the morning and make sandwiches in the evening, or vice versa. As you prefer.

    Now prepare the remaining ingredients. Cut 4 pieces of white bread. You need to cut it as thin as possible; it doesn’t play a special role in this recipe and is suitable instead of “plates” for the main product. In a non-stick frying pan, fry each piece without oil until golden brown on one side. Immediately rub each piece with a clove of garlic.

    Break one egg into a cup, beat with a fork and pour into a heated frying pan to form a pancake. Fry on both sides for two minutes. The frying pan can be greased with a silicone brush dipped in vegetable oil. I made two pancakes - I mixed the mussel marinade with one egg, so the pancakes turned out to be different colors. But you don’t have to do this; it doesn’t affect the taste of the dish. Cut the finished pancake into 4 parts and place on the fried side of the bread.

    Place 1 teaspoon of mayonnaise in the center of each pancake. Drain the marinade from the mussels and place them, distributing them evenly, on the sandwich.

    Grate the cheese on a coarse grater. You can take any at your discretion.

    Spread the grated cheese evenly on top and place half a cherry tomato in the center. If you want, you don't have to steal. Place the sandwich in a preheated frying pan without oil and fry it, covered, over low heat until the cheese has melted. At the same time, the side of the bread that was not fried will brown.
