Marinated crispy zucchini with carrots

STEP 1

To prepare delicious crispy pickled zucchini for the winter, we prepare the necessary products with spices.
STEP 2

Using a curly knife, cut half a kilogram of carrots into small beautiful pieces and place in a deep bowl.
STEP 3

Cut half a kilogram of onions into thin half rings and place in a bowl.
STEP 4

Cut two kilograms of young peeled zucchini into arbitrary, not very large cubes and place in a large bowl.
STEP 5

Pour two and a half liters of water into the pan, then pour one hundred and fifty grams of sugar into it.
STEP 6

Pour one hundred and ten grams of coarse salt into the pan and turn on the stove over high heat and bring the water to a boil.
STEP 7

Place two cloves of garlic and four black peppercorns, cut into slices, into each of the prepared jars.
STEP 8

Place the first layer of diced zucchini in the jars.
STEP 9

Place a small layer of sliced carrots on top of the zucchini.
STEP 10

Place a layer of chopped onions on top of the carrots in the jars.
STEP 11

Fill all the jars with chopped vegetables to the very top in the same order.
STEP 12

Pour one hundred and fifty grams of 9% table vinegar into a pan of boiling water.
STEP 13

Mix all the ingredients well in the pan and turn off the stove.
STEP 14

Pour the prepared hot marinade to the very top of the jars with vegetables.
STEP 15

Cover all jars with sterile lids.
STEP 16

Pour the required amount of hot water into a large saucepan, then cover the bottom with a kitchen towel and place jars covered with lids in it.
STEP 17

If necessary, add water to the pan, which should reach the sides of the jars, then place the pan on the stove that is on and bring the water to a boil, after which we sterilize the jars for six minutes.
STEP 18

Having taken the jars out of the pan, tightly close them with lids and store them in a dark and cool place away from heating devices.
STEP 19
