Macarons with chocolate cream

STEP 1

First, mix almond flour with powdered sugar. The flour should be dry.
STEP 2

Then take the aged whites (kept in the refrigerator for 3 days) at room temperature and beat until soft peaks, then gradually add sugar and beat until hard peaks (I beat for 10 minutes), add cocoa powder.
STEP 3

Sift the flour mixture through a sieve into the beaten egg whites.
STEP 4

Gently mix the flour mixture with the beaten egg whites using a spatula.
STEP 5

Using a pastry bag, pipe out cookies with a diameter of 2-3 cm and hit the baking sheet on the table several times to release excess bubbles. Let them stand at room temperature for an hour.
STEP 6

While the cookies are infusing, we prepare the cream in a water bath. Mix the chocolate with cream until thick and put it in the refrigerator.
STEP 7

Place in a preheated oven at 150 degrees Celsius and bake for 15 minutes.
STEP 8
