Step-by-step preparation
STEP 1
Let's prepare the ingredients. Dry beans need to be prepared in advance, rinsed and soaked overnight in cold water so that they swell well. Lobio can be prepared from any type of bean: white, red, the main thing is not to mix them, because their cooking time is different.
STEP 2
In the morning, drain the water in which the beans were soaked, rinse them again, add fresh water, put on fire and cook the beans until half cooked. 30 minutes of cooking is enough; the beans must not remain hard or, conversely, become overcooked.
STEP 3
Wash the tomatoes thoroughly, cut out the stems, cut the tomatoes into quarters or cubes. If the skin of the tomatoes is thick, then it is better to remove it by pouring boiling water over the vegetables.
STEP 4
Grind the tomatoes in a blender into puree.
STEP 5
Wash the bell pepper, cut out the stalk with the seed pod, cut it into cubes or strips.
STEP 6
Peel the onions and cut them into cubes.
STEP 7
Wash the carrots, peel and grate on a medium grater.
STEP 8
Heat vegetable oil in a frying pan. Place cooked onions and carrots on it and fry until soft.
STEP 9
Place the tomato puree in a saucepan on the stove and bring to a boil. Add to it beans, roasted vegetables, bell pepper, and a clove of garlic passed through a press. Add spices: sugar, salt, suneli hops, hot pepper, cilantro. Simmer over medium heat for about 20 minutes.
STEP 10
We prepare the jars in advance: wash them with soda, sterilize them using one of the proven methods: in a water bath, in the oven or in the microwave. Wash and boil the lids, dry them. It is better to use small jars for this preparation, so that after opening the snack will be eaten quickly. Place the lobio in the jars. We roll them up and let them cool “under the fur coat” at room temperature. Store in a cool place. Bon appetit!
