Light salad for birthday

Fast, simple, dietary, without mayonnaise! A light birthday salad is very similar to the traditional Olivier salad, only less caloric. It does not contain potatoes or carrots, and chicken meat is added instead of sausage. It can also be served to children.

    How to make a light salad for a birthday? Prepare your food. Pre-boil or bake the fillet and then cool. Take boiled eggs. One large cucumber or two small ones. Place the peas in a sieve to drain all the liquid. You can use any salad leaves - lettuce, iceberg, romaine, even Chinese cabbage (its green part will do). I have frisee salad. Take sour cream with low fat content - 10-15% will be enough.

    I used baked fillet. How to bake fillet? Wash the meat and dry it well. Salt it well on all sides, you can also coat it with any spices (I didn’t). Wrap the fillet in foil and place in a baking dish. Bake in the oven at 180°C for 35-40 minutes, depending on the size of the piece. Cool the finished fillet and cut into cubes.

    Peel the eggs and chop them into cubes.

    Wash the cucumber and cut off the stems. Cut into cubes the same size as the previous products. Be sure to taste the cucumber before slicing to see if it is bitter, otherwise it will ruin the whole salad.

    Wash the greens, dry and finely chop. I took dill; parsley and green onions would go well in this salad.

    Place all the vegetables and chopped herbs in a salad bowl. Add green peas. Wash the lettuce leaves and dry them well. Tear them into a salad bowl. It is important to do this with your hands; contact with a knife causes the salad to oxidize and wither faster.

I brought a small head of lettuce from the garden. After searching the website for a recipe, I settled on a light salad for my birthday. In addition to lettuce leaves, chicken, eggs, cucumber and herbs were required for cooking. After boiling and cooling the chicken and eggs, I cut them into small cubes. I also cut the cucumber. I chopped lettuce and dill (I didn’t add green peas). I combined everything in a deep bowl, salted it and dressed it with mayonnaise (instead of sour cream). The salad turned out great! Although simple, but very tasty! I liked the combination of chicken, eggs and fresh vegetables. We ate the salad instantly, the whole plate at once. Thank you very much!
