I wanted to make lean apple strudel. I found this recipe on the website and decided to try it. The features of the recipe (the presence of yeast and the absence of vegetable oil in the dough, as well as the “brewing” of apples for the filling with boiling water) seemed strange to me, but I decided to stick to the recipe exactly. I combined all the necessary ingredients for the dough in the quantities suggested by the author and kneaded the dough. It turned out to be quite steep; I kneaded it well several times during proofing. In a warm place (in a warm oven turned off) the dough rose well. During this time, I prepared the filling as suggested in the recipe, steamed the apples with boiling water, threw them in a colander, and after all the water and apples had cooled down, mixed them with sugar and cinnamon. I divided the risen dough into four equal parts, making four medium-sized strudels, and baked them on a baking sheet in two batches. To tell the truth, rolling out and stretching yeast dough is still fun. Therefore, during the preparation process, I didn’t really understand the essence of this recipe and thought that it would be easier to prepare ordinary stretch dough without yeast with the addition of vegetable oil. But in fact, there are people who adhere to strict monastic fasting, in which on some days the use of vegetable oil is limited, and this recipe is just for this case - yeast allows unleavened dough not to be “plasticine” after baking, and apples for fillings are softened by steaming, and not in oil in a frying pan. My strudel turned out to be tasty, but at the same time somewhat bland, hard and moderately sweet, which is justified by the set of ingredients included in the composition and its intended purpose - a delicacy for a strict Lenten table. The kids and husband really liked it and ate all four pieces in one sitting. For those who decide to cook according to this recipe, I advise you to knead the dough not with the entire amount of flour at the same time, but add it gradually and not all of it (this will make the dough easier to roll out and the strudel itself will be softer), while stretching the dough thinner when shaping, otherwise The result is not a strudel, but an apple roll. When preparing Lenten dishes, I don’t limit myself to vegetable oil, so next time I’ll make stretch or puff pastry for strudel. Thanks to the author for the recipe and interesting experiment!

The recipe is really easy, but I don’t like to cook real strudel because of the hassle with the dough, it’s difficult, you have to stretch it out. You can add cinnamon to the apples, but this is not for everybody, or even replace the apples with pumpkin. Thanks for the recipe, now I’ll make strudel more often, you’ve made my family happy :)
