From time to time I cook pancakes in the morning. This is one of my children’s favorite breakfast options, and the adult half of the family too. Today I pampered my household with kefir pancakes without eggs. The dough for such pancakes is prepared quite unusually, at least for me. I have never brewed pancake dough with boiling water. The consistency of the dough is quite liquid; a lot of bubbles form on its surface during settling. I had to adapt to baking pancakes. The first pancake stuck to the frying pan in which I usually bake pancakes, and I couldn’t turn it over properly. For subsequent pancakes, I took a cast iron frying pan. Having constipated two more pancakes, I finally set the fire to the required power, and the pancakes began to bake like clockwork - easily and simply. Before baking each pancake, I greased the pan with vegetable oil. The cast iron frying pan is very heavy, and only my husband can distribute the pancake batter by pouring the batter with one hand and tilting the pan in a circle with the other (it’s not easy for me to do it with both hands). So I formed the pancakes, distributing the dough in a circle using the rounded side of the ladle. The pancakes turned out tender, delicate, very beautiful and tasty.
