In addition to carrots and peppers, you can add other vegetables - onions, beans, eggplant, broccoli. Adjust the amount of garlic, ginger and soy sauce to your taste. Instead of rice vinegar, regular table vinegar 9%, slightly diluted with water, is suitable.

    Wash the chicken, dry it and cut into small pieces.

    Wash the carrots, peel and cut into small strips.

    Cut the flesh of the bell pepper in the same way.

    Add sugar and salt to the vinegar and stir.

    Rinse the rice well in several waters and cover with clean cold water. Place the saucepan over high heat and cover with a lid. When the water boils, reduce the heat to low. Cook the rice for 10-15 minutes until the water has completely boiled away. Then turn off the heat and leave the rice to stand covered for another 10 minutes. Pour vinegar with sugar and salt into it, stir.

    Heat vegetable oil in a frying pan for frying. Place chicken pieces in it so that they lie in one layer (if you have a large portion, then fry in parts). Fry the chicken over high heat, stirring until it changes color. Then move it to the side and lay out the vegetables. (If you have a lot of chicken, remove it from the pan). Add ginger. Also quickly fry the vegetables, then mix them with the chicken and keep on the fire for another 5 minutes, no more.

    Add rice to chicken and vegetables and stir. Pour in soy sauce and stir again. Taste the dish, add salt or add more sauce if necessary (I added both salt and sauce).
