You can use beets boiled or baked in the oven in foil until tender. Stores sell ready-boiled beets in vacuum packaging. Using store-bought beets will save you cooking time.

    Pre-boil the beets in their skins in boiling water until tender, or wrap them in foil and bake in an oven preheated to 180°C for 1 hour. The exact time depends on the freshness and size of the vegetables. Cool the finished beets, peel them and cut into slices or circles.

I have never pickled beets before. And then I came across a recipe for quick-cooking pickled beets with garlic, and I really wanted to try it. I thought that half a glass of sugar would be too much, and half a teaspoon of salt, on the contrary, would be too little. But no, the marinade turned out very tasty. The beets marinated perfectly overnight. The sweet and sour marinade perfectly highlights the sweetness of the beets. I would add more garlic to make it spicier, but that's just my taste. For the first time I prepared instant marinated beets with garlic. It turned out to be very tasty! I baked beets for this appetizer because they were very large. In addition, with this method, beets retain more flavor and vitamins, it seems to me. After cooling, I cut it into quarters with a curly knife. I cut the garlic into slices. I put everything in a container and poured hot marinade over it. I left it on the table for about 5 hours and then put it in the refrigerator overnight. I didn’t even expect that I would like beets so much, which I don’t really like). Marinating makes it tasty and pleasantly sour. The beet slices are tender and spicy at the same time!
