How to freeze zucchini

STEP 1

How to freeze zucchini for the winter? First, prepare the zucchini yourself. They can be young or mature, large or small, with or without seeds. The only thing is, do not use damaged or limp zucchini; the rest can be worked with. Wash the zucchini thoroughly and dry it with a towel. If you use young zucchini or with thin skin, you do not need to peel it. Otherwise, remove the skin using a vegetable peeler.
STEP 2

Now choose a form for freezing the zucchini. To a greater extent, it is determined by what is subsequently supposed to be prepared from this vegetable. These can be circles, cubes, plates, hollow halves for subsequent stuffing. I suggest cutting into cubes or bars. Frozen zucchini cut this way is suitable for stews, soups, satays and other vegetable dishes. If using zucchini with seeds, remove them (these are usually found in large zucchini).
STEP 3

The cubes turned out to be approximately 1cm in size. x 1 cm. This is the optimal size (for the selected dishes that will subsequently be cooked with them), you can cut them a little larger. Also pat the sliced zucchini dry with paper towels to remove any excess moisture that the zucchini releases.
STEP 4

Next, divide the zucchini mixture into several portions. Their quantity depends on how many zucchini and what size you are preparing, or if you are making several different types of cuts.
STEP 5

Place all portions in clean, dry containers with tight lids, special bags designed for freezing food, and vacuum bags. After placing the zucchini pieces in the bag, carefully squeeze out the excess air and close the bags. If you put it in thin regular plastic bags, then put it in 2 bags at once, as they can easily tear (under the influence of low temperatures they become more fragile). Then put the zucchini in the freezer.
STEP 6

If you freeze zucchini in containers like I do, then when you take the vegetable cubes out of the container, you will often remove the “zucchini block” (entirely), but don’t worry, by putting it in a plastic bag and applying a few strong pressures with your hands, the block will easily be divided into cubes.
