Hot appetizer - sautéed eggplant with tomatoes and peppers

A flavorful hot appetizer that fits well into any menu! Sauté is very tasty, satisfying and not a shame to put on the holiday table. I like these eggplants because they are cooked without vinegar and garlic. Since we have eggplants all year round in Israel, I usually cook half the amount and store them in the refrigerator, although sautéed eggplants do not last long because they are eaten quickly.

Girls, cook and have no doubt, you will like this Sauté. I've been making it for 30 years now and everyone loves it. At home they ask me to cook it more often, but I try to diversify eggplant dishes, since I have a lot of my own recipes and am also adding to my “piggy bank” with recipes from the Internet from culinary sites.

Nice recipe and healthy. Eggplants are extremely beneficial for health, especially for the heart. And those who like it spicy can prepare this sauce separately: finely chop parsley and dill, season with pepper and garlic, and season with wine vinegar. I put this sauce on the table so that my men can eat it, they can’t go anywhere without something spicy.

Yes, a beautiful and interesting recipe for preparing a dish))) I tried this dish from zucchini, I didn’t really like it, I think it lacked spiciness, but I’ll definitely try to make a sauté from eggplants and add more pepper))) I think it should turn out delicious !
