STEP 1

STEP 2
Boil water in a saucepan of suitable volume, add salt and pour in the horns. Cook the cones over a moderate simmer, stirring occasionally, until al dente, meaning slightly undercooked. STEP 3

STEP 4
Add flour to the pan and mix with butter. Heat the flour over low heat, stirring, until golden brown, about 1 minute.
STEP 5
Pour a small amount of warm milk into the pan, at the same time stir and grind the lumps of flour. This is easier to do in a small amount of liquid.
STEP 6
When the mass becomes homogeneous, pour in the remaining milk and stir.
STEP 7
Salt the sauce, add nutmeg (optional), Provençal herbs. Stir. You can add ground black pepper. Over moderate heat, stirring, bring the sauce to a boil. Boil the sauce until slightly thickened.
STEP 8
Grate the cheese on a fine grater. You can take any cheese: hard, semi-hard, soft. The main thing is that it is tasty, without milk fat substitutes and melts well. Save some cheese for the top.

Add grated cheese to the sauce.
STEP 10
Stir well until the cheese is completely melted. Remove the sauce from the heat.

In a small bowl, beat the egg until smooth.
STEP 12
Place the cones in a bowl. Add the beaten egg to the horns and stir.
STEP 13
Pour in the sauce, mix well.

Sprinkle the remaining cheese on top of the cones.
