Honey cake in a water bath

Step-by-step preparation
STEP 1
Place butter, honey and sugar in a large metal bowl or saucepan. Place everything in a water bath. Wait until everything melts and the mass becomes homogeneous.
STEP 2
Add soda to the mixture and stir vigorously. The mass will begin to foam strongly and increase in volume. Cook until the color turns caramel. Then remove the mass and let cool slightly.
STEP 3
Then add the eggs into the mixture and gradually add flour, knead the dough. You may need a little more or less flour than indicated. While mixing, keep an eye on the consistency of the dough. The dough should have such a consistency that it feels like you need to add a little more flour. But it's worth stopping here. Place the dough in the refrigerator for several hours. It will cool down and absorb all the flour. And it will stop sticking to your hands.
STEP 4
Roll out the finished dough and cut out cakes of the required diameter.
STEP 5
Remove excess dough. And pierce the cakes themselves with a fork along the entire perimeter. This is necessary to prevent bubbles from appearing on the cakes during baking. Place the baking sheet in the oven preheated to 180 degrees for 4-6 minutes. The cakes bake very quickly, so do not go far from the oven. Cool the finished cakes.
STEP 6
To prepare the cream, combine rich sour cream (fat content of at least 25%) and beat everything into a lush, stable cream.
STEP 7
Layer the honey cakes generously with cream and assemble the cake.
STEP 8
Grease the top and sides of the cake generously with cream and place in the refrigerator to soak. The finished cake can be sprinkled with grated chocolate or covered with chocolate glaze. Or you can bake the leftover dough. Then grind them into crumbs and sprinkle them all over the cake. Watch according to your special occasion. Enjoy your tea!
