STEP 1

How to make homemade gooseberry sauce for meat for the winter? Prepare all the ingredients needed for cooking. The specified amount will yield 0.5 liters of ready-made gooseberry sauce for meat. From green gooseberries the seasoning will be more sour and tart, from red gooseberries it will be more tender, but both options will be suitable for meat. Khmeli-suneli spices will make it suitable for meat.
STEP 2

Prepare the gooseberries, sort them, rinse them under running water and dry them. If you are patient and cut off the stigmas and tails of the berries, it will be even better. Regular nail scissors are well suited for these purposes.
STEP 3

Place the prepared gooseberries in a saucepan. Add 2-3 tablespoons of water. Leave overnight or at least 3-4 hours in a cool place.
STEP 4

It is better to wash seasoning jars intended for long-term storage with baking soda and sterilize them. Sterilize the lids by boiling for 10 minutes.
STEP 5

Place the pan with gooseberries over low heat. Simmer the berries over low heat until they are soft (about 10 minutes).
STEP 6

The sauce can be made from whole gooseberries or berries minced through a meat grinder. If, after grinding with a meat grinder or blender, the berry mass is additionally rubbed through a sieve, the consistency of the sauce will be more tender and smooth, because there will be no seeds in it. I simply blended the contents of the pan with an immersion blender.
STEP 7

Add sugar and salt to the gooseberry puree. Never use fine or iodized salt for preparing canned food. Coarse regular salt or special salt for pickling vegetables is best. Cook the sauce until the bulk ingredients dissolve.
STEP 8

Add suneli hops and pressed garlic, cook the sauce for another 10 minutes.
STEP 9

Pour oil and vinegar into the gooseberry sauce and stir.
STEP 10

Distribute into prepared jars and close them tightly with metal lids. The sauce must be closed hermetically; only metal lids of the “twist-off” type or for sealing with a special key are suitable for this purpose.
