Homemade dumplings with minced chicken
Ingredients
Step-by-step preparation
STEP 1
How to make homemade dumplings with minced chicken? Start cooking by kneading the dough. How to make the dough? Sift flour into a deep bowl and add salt. Sifting will not only remove possible debris from the flour, but will also saturate it with oxygen, which will make the dough softer.
STEP 2
Beat in the egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 3
Next, pour in water at room temperature (this is an important point - in warm water, the gluten contained in the flour, which is responsible for elasticity, will develop faster). Knead the dough.
STEP 4
If the dough sticks slightly to your hands, add a little flour. Or vice versa, if the dough is still crumbling, pour in a little more water. Everyone’s flour is different and so is the volume of water. Therefore, look at the consistency of the dough. It should become uniform, smooth and elastic. Wrap the dumpling dough in cling film and leave to rest for 20-30 minutes.
STEP 5
In the meantime, get on with the filling. How to make the filling? To prepare the filling, I took chicken fillet, but if you don’t have time, you can also use store-bought minced meat. Pass the chicken fillet through a meat grinder or grind in a blender. Peel the onion, also pass through a meat grinder or blender, add to the minced meat, add salt and pepper. If desired, you can add 1-2 cloves of garlic to the minced meat. Mix well. The filling is ready.
STEP 6
Using a rolling pin, roll out the rested dough into a thin layer. Using a glass, cut out circles from the dough. Knead the remaining dough well again and roll out again.
STEP 7
Place 1 teaspoon of filling on the circle.
STEP 8
Fold the workpiece in half and fasten the edges well.
STEP 9
Roll up the resulting “pie” and mold the corners. Make dumplings using all the dough in the same way. Place the finished dumplings with minced chicken on a floured surface. In this form, dumplings can be frozen.
STEP 10
Cook the dumplings in plenty of water. Bring the water to a boil, add salt, and if desired, add a bay leaf. Carefully place the dumplings into the boiling water. I advise you to lower the dumplings one at a time and stir constantly so that they do not stick together. Cook homemade dumplings with chicken for about 10-15 minutes from the moment of boiling. Then carefully remove with a slotted spoon. Serve with broth or sauces. Bon appetit!
