  1. STEP 1

    STEP 1

How to make cookies with beer? Prepare the following ingredients. The butter must first be put in the freezer so that it freezes and makes it easier to grate. I take light, warm beer. You can use a little less sugar or make unsweetened cookies. Sift the flour first.

  2. STEP 2

    STEP 2

Grate the butter from the freezer on a coarse grater into a deep bowl. To make the butter easier to grate and not melt from the warmth of your hands, roll it in flour.

  3. STEP 3

    STEP 3

Add sifted flour and 2/3 of the total sugar. Mix thoroughly for a few minutes to form small lumps. The result is a loose mixture with a large number of lumps.

  4. STEP 4

    STEP 4

Quench the soda with vinegar. To do this, take a tablespoon, put a quarter teaspoon of soda in it, and drop a small amount of 9% vinegar or lemon juice on top. The soda will hiss loudly - a reaction will begin with the release of carbon dioxide, which is what will make your baked goods rise. Add slaked soda to the dough. How and when you can replace baking soda with baking powder can be found in the article; the link to it is at the end of the recipe.

  5. STEP 5

    STEP 5

Pour light beer into the dough and knead it with your hands. The dough turns out pliable and elastic, does not stick to your hands at all. Gather the dough into a ball, wrap it in cling film and put it in the refrigerator for 1 hour. Remember that you may need less or more flour, you can find out more in the article, the link to it is at the end of the recipe. Don't be alarmed by the presence of alcohol in the dough. During baking, it will evaporate, leaving only the aroma, and the dough will rise due to brewer's yeast.

  6. STEP 6

    STEP 6

Turn on the oven to preheat to 180 degrees. Remove the chilled dough from the refrigerator and roll it out into a layer 0.5 cm thick on a floured table. Using round molds or a glass, cut out circles from it.

  7. STEP 7

    STEP 7

Sprinkle each circle with a little remaining sugar and fold in half.

  8. STEP 8

    STEP 8

Using a knife, make three equal cuts along the edges of each cookie. Sprinkle with sugar. If necessary, you can grease each cookie with milk or beaten egg so that the sugar sticks better. Place the cookie blanks on a baking sheet greased with butter or lined with baking paper. Place the baking sheet with cookies in the preheated oven for 20 - 25 minutes. The cookies should become golden.

  9. STEP 9

    STEP 9

Remove the finished cookies from the oven, remove from the baking sheet and cool. Cookies can be served with freshly brewed tea, a cup of coffee or a glass of milk. Bon appetit!

My daughter and I baked homemade beer cookies. I just have some light beer left. I haven’t used it in baking before, I was wondering what would happen. The recipe is simple, there are few ingredients, not even eggs. I grated the butter on a coarse grater and mixed it with flour (this is another Soviet way of making shortcrust pastry). I extinguished the soda with lemon juice, at the same time adding additional flavoring. She poured the beer last. Added a little flour to form a bun. My daughter wanted to make cookies quickly, so instead of refrigerating, she put the dough in the freezer for half an hour. Then the bun was divided into two parts, each was rolled out and circles were cut out. They didn't sprinkle sugar on top so that it wouldn't be too sweet. The cookies were baked for 20 minutes and became slightly browned on top. The inside of the cookie is airy, soft, porous, like a butter cookie. We did not smell or taste beer. Only a pleasant sweetish taste and aroma of freshly baked cookies!
