    Mix yeast with 1 tsp. sugar, pour in warm milk and leave for 15 - 20 minutes until a foamy “cap” appears. This will mean that the yeast has activated. If this does not happen, then the yeast will have to be replaced.

    Place the eggs in a separate bowl and beat with a fork or whisk. Pour out 2 tablespoons, they will be needed to grease the bagels before baking. Add salt, sugar to the rest of the egg mass and mix everything thoroughly.

    Sift the flour to enrich it with oxygen. Thanks to this, the finished bagels will turn out more tender and fluffy. Make a well in the flour. Pour the egg mixture and the risen yeast into the well and stir. At the end of kneading, pour in the cooled butter and knead the dough, first in a bowl. Then lightly grease your hands and table with vegetable oil and continue kneading on the table for about 5 minutes until smooth and homogeneous. The dough will no longer stick to your hands.

    Lightly grease a clean bowl with vegetable oil. Form the dough into a ball and place it in a bowl, cover with film and a napkin. Leave the dough in a warm place to rise for 1.5 hours.

    Divide the dough into 8 equal balls of 120 - 125g. Make a hole in the middle of each ball with your finger and, scrolling, stretch it to the desired size.

Place the pieces on a baking sheet and leave for 15 - 20 minutes. In the remaining 2 tbsp. eggs add 2 tsp. milk and brush the risen bagels. Sprinkle the top with poppy seeds, sesame seeds, and sugar. Bake the bagels in an oven preheated to 200 degrees for about 15 - 18 minutes until golden brown. The exact time depends on your oven.

    Cover the finished bagels directly on the baking sheet with a napkin and let them rest for about 10 minutes. There is no need to grease them with anything, they will be soft anyway.

When I saw a recipe for homemade bagels in the oven with poppy seeds, I immediately wanted to make them. The set of products for them is the simplest, which is always available at home, so I didn’t put off preparing it. I used premium flour, it took me two tablespoons more. The eggs were taken in category C1. The dough turned out very tender, soft, pliable. It turned out that the dough took almost 2 hours to rise instead of 1.5 hours. During this time it increased almost 2.5 times. From the resulting amount of dough, I got 7 bagels weighing about 120 grams and one weighing almost 150 grams. My daughter helped me by brushing the bagels with egg and milk and very generously sprinkling them with poppy seeds and sugar. Three buns were left without poppy seeds because my husband doesn't like them. The buns were baked on siliconized parchment for 20 minutes at 200 degrees: 10 minutes on the bottom level of the oven and 10 minutes on the top. The bagels turned out wonderful: fluffy, soft, rosy and very, very tasty. They are truly gigantic in size; you can fill up on one bagel for a long time. I will definitely bake more of these.
