    How to make ayran from kefir? Very easy, fast and completely uncomplicated! The only equipment you will need is a mixer or blender. First, prepare the necessary ingredients according to the list. It is very important that the water is drinkable, otherwise the drink may have a not very pleasant aftertaste. This can be bottled water or boiled chilled water.

    Pre-cool kefir and water in the refrigerator. Pour the cooled kefir into a deep bowl or a special mixing bowl. Any kefir will do, but it must have a fat content of at least 2.5%. With one percent kefir, the drink is not as tasty. And rather it only has the smell of kefir, and not the taste. Add salt and pour in cold water.

    Beat the mixture thoroughly with a mixer at high speed until a fluffy, stable foam appears and until the salt is completely dissolved. Taste the drink and, if necessary, add more salt or, conversely, dilute it with water or kefir if it seems too salty.

    Pour homemade ayran into glasses, garnish with dill sprigs and serve immediately while the foam holds. If desired, you can finely chop the dill, add directly to the drink and beat with a mixer. Bon appetit!

I prepared the homemade ayran drink at the request of my husband, he asked for some unusual drink. Well, ayran is very unusual for me) I tried store-bought, it is thicker. Homemade turned out to be more liquid; my kefir was 2.5%. I don’t know, maybe kefir is fattier) I added just a little salt. I beat it with an immersion blender with a whisk attachment. The foam appeared on the surface, but it did not last long, about five minutes. While I was waiting for my husband to come to the table, I whipped it again) It turned out good for my taste, I would add a little more pepper. My husband liked it too, he loves milk in any form. But usually kefir is sweetened, but here it’s salty) The taste is pleasant, refreshing, the consistency is delicate. Homemade ayran went perfectly with stewed meat.

Similar to Indian chaas or buttermilk. Only they also add cumin or cumin, black pepper and ginger. Maybe something else too. But as an option, I advise you to add ground cumin/cumin. Give it a try.
