Homemade apple marshmallow according to GOST

STEP 1
How to make marshmallows from apples according to GOST? Prepare your ingredients. You can take any apples. If they are too sour, add more sugar - and vice versa. Wash the apples thoroughly and dry. Peel them and cut them into slices, removing the core and seeds.
STEP 2
We need to get apple puree. To do this, you could bake the whole apples in the oven. But I make it easier, I put them in the microwave. Place the apples in a suitable container and microwave for 5 minutes. Do this several times until the apples are soft. Then puree them in a blender and measure out 250g of applesauce.
STEP 3
Add vanilla sugar and 250 g of sugar to the applesauce. Stir everything well and leave the puree and sugar to cool. In the future we will need completely cooled puree.
STEP 4
Prepare cooking bags and attachments. I use the ones like in the photo. Immediately prepare parchment sheets where we will place the marshmallows.
STEP 5
Mix 4 level teaspoons (8 g) of agar agar with water. You can do this in advance.
STEP 6
Transfer the cooled applesauce to a mixing bowl. Begin beating, adding half the egg white as you go. Beat for 2 minutes, then add the rest of the egg whites and beat the entire mixture until the mixture thickens and turns white. Leave the mixer running while you prepare the agar.
STEP 7
Place agar agar on the stove. Bring it to a boil, the mass will look like jelly. Add sugar (475g). Mix everything and cook for about 4 minutes. I turn down the heat after it boils. Cook the agar until a string appears. That is, when you take out the spatula, a thread like the one in the photo will flow from its tip.
STEP 8
Our puree is still whipping. Remove the agar syrup from the stove and begin pouring it in a thin stream down the side of the bowl into the applesauce with the egg whites, whisking continuously. Next, beat for another 5 minutes.
STEP 9
Beat the mixture until it becomes heavy and begins to fall off the whisk. This is what the mass will look like.
STEP 10
Immediately pour the mixture into cooking bags. I have two big ones. This must be done quickly, because the mass hardens quickly - keep this in mind!
STEP 11
Start pipetting marshmallows from piping bags onto parchment sheets. I got 3 sheets. Leave the marshmallows at room temperature on the counter overnight, at least 12 hours. This condition is mandatory! You can sprinkle the apple marshmallows with powdered sugar.
