    How to pickle herring with mustard? Prepare all the indicated ingredients. I will prepare a shortened version using just one herring. It is better to take fresh fish, but if this is not possible, then frozen herring must first be thawed, leaving it on the table at room temperature.

    Wash and dry the defrosted fish. Cut off the head and tail, discard the entrails. Then separate the fillet from the backbone, remove the bones and skin. Place the cleaned herring fillets in a deep bowl. First, the fillet is placed whole (I cut it into two parts for convenience), and then we will cut it into pieces.

    Pour the prepared fish fillet with a liter of water, add a tablespoon of salt, and stir. The salty brine should cover the entire fish. Leave the herring in this brine for about 2 hours. I put the fish in brine in the refrigerator.

    In a separate bowl, mix 2 types of mustard, sugar, vegetable oil and lemon juice. Mix thoroughly. When two hours have passed, drain the brine from the fish and cut it into small pieces that will be convenient to take, for example, with a fork.

    Pour the prepared dressing over the herring and mix everything. Place the fish in the refrigerator to marinate for 6-8 hours. The marinade should cover the entire fish so that each piece is thoroughly marinated. After the specified time, the herring will be ready.

    Serve the finished herring in mustard cold - this is an appetizer that goes perfectly with potatoes prepared in any way. However, it is worth remembering that herring in mustard cannot be stored for a long time; in order to avoid troubles, such a dish should be consumed as soon as possible.

The herring turned out delicious! I had one fish. Having defrosted and cleaned it, I separated the fillet from the bones and cut each part in half. Dissolved 0.5 tbsp in 0.5 liters of water. l. salt, poured this solution over the fillet and put it in a cool place for 2 hours. Then I drained the brine, cut the fillet into small pieces and poured the prepared mustard sauce over them. Since I didn’t have Dijon mustard for the sauce, I took a double portion of regular mustard. According to the calculator it was about 2 teaspoons. Added 0.5 tsp to the mustard. sugar, 1.5 tbsp. l. vegetable oil and 0.5 tbsp. l. prepared lemon juice. I mixed all the ingredients, poured the sauce over the herring and left it to soak until the morning. The taste of herring with mustard turned out to be excellent - slightly salty, piquant. The fish itself turned out tender and soft. The only thing is that I added a little more salt to the herring, since we like it saltier. Thank you very much for the recipe!
