    How to make red velvet cake: Sift flour into a bowl, add baking soda, baking powder, salt and 1 tbsp. l. cocoa powder. Mix everything thoroughly.

    Break 3 eggs into another deep bowl, add sugar, beat with a mixer at high speed for 3 minutes until white. Add vegetable oil and mix.

    Dissolve red food coloring in kefir and mix. Pour red kefir into a bowl with eggs. Mix with a mixer. In two stages, add the dry ingredients to the red dough and mix.

    Grease a baking dish (diameter 25-27 cm) with butter and pour in half the dough. Place the dough in an oven preheated to 180 degrees for 20 minutes. Check the readiness of the cakes with a toothpick - it should be dry (do not dry out the sponge cake under any circumstances). We also bake the second cake.

    Let's start preparing the cream. Beat mascarpone (cream cheese) and powdered sugar with a mixer. Pour very cold cream into another bowl, beat until stiff peaks form. Mix the cream with the whipped cream cheese.

    Cut off the sides and top of both cake layers. Grind the biscuit scraps into crumbs.

    Grease the bottom cake generously with buttercream and cover with the second cake layer. We also grease the top and sides of the cake with cream. Sprinkle the sponge cake with butter cream with crumbs and decorate as desired.
