Hake stewed with onions, carrots and vegetables in a frying pan

Step-by-step preparation
STEP 1
How to deliciously and quickly stew hake with onions and carrots in a frying pan? First, remove the hake from the freezer and leave it at room temperature to defrost. What fish is best to use? I used hake in the recipe, but any fish can be cooked this way.
STEP 2
To defrost faster, immerse the fish in cool water. After the hake has thawed, drain the water and dry the carcasses with paper towels. Gut the fish, remove scales and cut off sharp fins. Rinse under running water and dry again.
STEP 3
Prepare all other ingredients.
STEP 4
Peel carrots, onions and garlic. Cut the bell pepper in half, remove the core and seeds. Rinse vegetables in clean water.
STEP 5
Cut the carrots into thin strips, the onion and tomato into small cubes, the pepper into half rings, and chop the garlic as desired. If desired, remove the peel from the tomato first.
STEP 6
Cut the hake into pieces about 4-5 centimeters wide.
STEP 7
Heat vegetable oil in a frying pan. If possible, use a pan with thick sides and bottom. Add onions, carrots and peppers to fry. Cook vegetables over high heat, stirring occasionally, for about 7 minutes.
STEP 8
Then add tomatoes and garlic, cook for about 5 minutes more. Don't forget to stir everything, otherwise the vegetables will burn.
STEP 9
Season the vegetable mass with salt and pepper, add bay leaves and your favorite spices if desired.
STEP 10
Place the fish pieces in the pan, pressing them lightly into the vegetables.
STEP 11
Pour boiling water so that it covers the hake almost to the top.
STEP 12
After boiling, reduce the heat to minimum, cover the pan with a lid and cook for 20 minutes (after 10 minutes from the start of cooking, open the lid, turn each piece to the other side, so the fish is soaked in the vegetable sauce as much as possible and salted evenly, then simmer for another 10 minutes).
STEP 13
Pepper the finished dish and sprinkle with pre-chopped fresh herbs. Ready!
