STEP 1

How to make gingerbread dough? Prepare all ingredients. The dough must be made before the planned time for baking the gingerbread cookies, preferably in the evening. He needs to “sit out” in the cold. It is better to remove the ingredients from the refrigerator in advance so that they are at room temperature. In addition to the standard gingerbread spices - cinnamon and ginger - you can use others to taste, for example, cardamom, cloves, nutmeg and others.
STEP 2

If the honey is candied, then it must be melted in a water bath or in a microwave oven and allowed to cool to room temperature. If the honey is fresh and liquid, then this step can be skipped. Pour honey into a bowl and place in a water bath, add spices, orange zest, and a pinch of salt. Heat the honey with spices in a water bath, stirring constantly until the aroma is fully developed, but do not allow it to boil.
STEP 3

Add softened butter to the honey mixture and stir until it dissolves. Remove the bowl from the water bath, add baking soda and stir. The mass should lighten and begin to bubble. Leave it to cool.
STEP 4

While the honey mixture is cooling, crack the eggs into another bowl and add sugar.
STEP 5

Beat the eggs and sugar with a mixer until you obtain a homogeneous light mass with foam on the surface.
STEP 6

Combine the egg and honey mixtures and stir. Add some of the sifted wheat flour. Thanks to sifting, the flour will be saturated with oxygen, and the finished dough will be softer and more elastic.
STEP 7

First mix the dough with a spatula, then continue kneading it with your hands. Add flour until you reach the desired dough consistency. It should be soft, slightly runny and sticky. You may need a little more or a little less flour than the specified amount. Place the dough in a bowl in the refrigerator for 15 minutes. Then roll the cooled dough into a ball, wrap it in cling film and put it in the refrigerator overnight.
STEP 8

In the morning, remove the dough from the refrigerator; it will become quite dense and elastic. You can move on to baking gingerbread cookies. Bon appetit!
