Rinse the nuts, dry them on paper towels, you can fry them a little in a frying pan, it will be more aromatic and tastier. Place the nuts in a blender bowl, you can use a meat grinder, but I prefer a blender.

    Wash the greens, dry them, cut them and add them to the nuts, chop them and transfer the resulting mass to a bowl.

    Bring the beets to readiness, I baked them in the oven for two hours at 180 degrees, but my beets are large, it may take about an hour and a half for a medium one. Cool the beets, peel them and cut them into pieces to make it easier to grind them in a blender.

I was looking on the website for something to cook for my husband and found a recipe for Georgian beet pkhali with nuts. I used to make pkhali from spinach, we liked it, and decided that it would be tasty for us with beets too) I boiled the beets in water, but in the process of forming the balls I realized that I had to bake them, because the mass turned out to be a bit moist. Roasted walnuts in a dry frying pan. This method even makes frozen nuts tasty and aromatic. For greens, I had dill and wheat microgreens. Grind all the ingredients in a blender at the same time. Replaced wine vinegar with apple cider vinegar. The beetroot mass balls formed easily, and after a little cooling in the refrigerator they became denser. We liked the taste of pkhali! It turned out juicy, aromatic and spicy. I recommend the recipe, very tasty!

But it was not possible to roll the balls))) they fell apart. And since my husband is allergic to walnuts, I made some with almonds - also quite good!
