This recipe has become a signature recipe in our family. I baked it with plums, raspberries, apples, but it tasted best with cherries.

    Frozen Cherry Meringue Pie only requires a few ingredients. Flour, sugar, eggs (yolks only), baking powder and vanillin for shortcrust pastry. Fresh or frozen cherries, sugar and starch for filling. And the classic meringue itself is made from proteins and sugar. I like this recipe because it is waste-free - 3 eggs are divided into whites and yolks, the yolks go into the dough, and the whites are used to make meringue.

    Let's start by preparing a light shortcrust pastry. Separate the whites from the yolks. We put the whites in the refrigerator, and mix three yolks with half a glass of granulated sugar.

    Melt the butter in the microwave in pulses, grind the yolks with sugar and add melted butter to them. Instead of butter, you can use margarine or spread.

    Add one and a half cups of flour, vanillin, baking powder and knead the dough.

    Place the dough in the pan, level it with a spatula and bake in the oven at 180 degrees for 20 minutes until the cake is browned.

    While the cake is baking, prepare the meringue. Add citric acid to the cooled egg whites at the tip of a knife and begin beating with a mixer, gradually adding half a glass of sugar. Beat the whites until stable peaks form. Transfer the meringue into a pastry bag.

    We take the cherries, wash them and take out the pits. If the cherries are fresh, then they need to be prepared in advance. I use frozen preparation already without seeds. Since I bake this pie often, I make preparations for it every summer. I wash the cherries, remove the pits, pack them in exactly 400 gram bags and freeze them. Add two tablespoons of sugar and two tablespoons of starch to the prepared cherries (if the cherries are fresh and not very juicy, then you don’t need to add starch), mix

    Using a star attachment, place the whipped whites on top. Reduce the oven temperature to 150 degrees and bake the pie for another 30 minutes until the meringue is browned.

    Leave the cake to cool in the switched off oven. This will make the meringue crispier. The meringue should not be all dry, it will be like cream inside the pie.
