Fried zucchini with garlic and tomatoes

Ingredients
Step-by-step preparation
STEP 1

How to make fried zucchini with garlic, tomatoes and mayonnaise? First, prepare the zucchini. Take medium-sized zucchini, preferably young, without large seeds. You can use zucchini instead of zucchini.
STEP 2

Wash and dry the zucchini. Trim the ends on both sides. Slice the zucchini lengthwise into thin slices. If the skin of the zucchini is thin, then you can leave it, but if the skin is dense and can prevent the zucchini from rolling into rolls, then it is better to cut it off. Place the zucchini in a bowl of a suitable size, add salt and leave for 10 minutes. Thanks to this, excess liquid will be released from them.
STEP 3

Prepare the tomatoes for the filling. Choose medium-sized fruits, preferably with a slightly elongated shape (like plum-shaped ones). Cut the tomatoes into slices according to the number of zucchini slices.
STEP 4

Prepare the necessary ingredients for the sauce. In addition to parsley, you can take any other greens to your taste. If you have large garlic cloves, you can take one. You can make your own mayonnaise. You will find recipes for homemade mayonnaise after the last step. Mayonnaise can be partially or completely replaced with sour cream. This snack will have a more delicate taste.
STEP 5

Peel the garlic and pass through a press. Wash the parsley, dry it and chop it finely (the smaller the better). In a bowl, combine mayonnaise, garlic, parsley, salt and pepper.
STEP 6

Mix everything thoroughly. The sauce is ready.
STEP 7

Drain any liquid from the zucchini. Dredge the zucchini in flour on both sides.
STEP 8

Heat vegetable oil in a frying pan. Read about how to choose the ideal frying pan, as well as how to choose the right vegetable oil in separate articles, links at the end of the recipe. Fry the zucchini slices on both sides until golden brown.
STEP 9

Place the finished zucchini on a paper towel to remove excess fat. Let the zucchini cool.
STEP 10

Brush each slice of zucchini with sauce. Place a tomato slice on top. Roll the zucchini into rolls.
STEP 11

Place the finished appetizer on a dish vertically and garnish with parsley. Bon appetit!
