    Wash and dry the zucchini. Trim the ends on both sides. Slice the zucchini lengthwise into thin slices. If the skin of the zucchini is thin, then you can leave it, but if the skin is dense and can prevent the zucchini from rolling into rolls, then it is better to cut it off. Place the zucchini in a bowl of a suitable size, add salt and leave for 10 minutes. Thanks to this, excess liquid will be released from them.

    Prepare the tomatoes for the filling. Choose medium-sized fruits, preferably with a slightly elongated shape (like plum-shaped ones). Cut the tomatoes into slices according to the number of zucchini slices.

    Prepare the necessary ingredients for the sauce. In addition to parsley, you can take any other greens to your taste. If you have large garlic cloves, you can take one. You can make your own mayonnaise. You will find recipes for homemade mayonnaise after the last step. Mayonnaise can be partially or completely replaced with sour cream. This snack will have a more delicate taste.

    Peel the garlic and pass through a press. Wash the parsley, dry it and chop it finely (the smaller the better). In a bowl, combine mayonnaise, garlic, parsley, salt and pepper.

    Drain any liquid from the zucchini. Dredge the zucchini in flour on both sides.

As long as the zucchini season continues, I have no problems with dinner for my husband) He eats them in any form at least every day. One of the most delicious dinners turned out to be zucchini fried with garlic and tomatoes. I make eggplant rolls in the same way, but zucchini fries faster) And I personally like the taste of zucchini better. I made the appetizer spicy and added more garlic. Parsley, in turn, adds flavor. For the filling I used light mayonnaise to slightly reduce the calorie content of the dish. The rolls are delicious, quite filling due to the flour and mayonnaise. They go great with a slice of fresh tomato.
