STEP 1
How to make fried pies without eggs, yeast and milk? Measure out the ingredients you need from the list. Start by preparing the filling, since the dough is not yeast and does not need additional time for proofing - you can prepare it right away. You can make a variety of fillings for pies: with potatoes, cabbage, rice and eggs, cottage cheese, jam, condensed milk, etc. ,

Wash the tomatoes, dry and cut into small cubes. If you wish, you can remove the wet inside with seeds. You need tomatoes that are ripe but strong. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.
STEP 3
Cut the cheese into small cubes or grate it on a coarse grater. I have curd cheese, but you can use any other cheese you like: processed cheese, mozzarella, suluguni, regular Russian, etc.

Wash the parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, for example, dill, green onions, or use a mixture of different herbs.

Add vegetable oil. Cool the water slightly.

Sift about 500 g of flour into a bowl. Gradually pour hot water in a stream and, gradually adding the remaining flour, quickly knead an elastic, non-sticky dough.

Please note that you may need more or less flour. The dough itself will take as much as it needs. If the dough is still sticky and you need even more flour than the recipe calls for, it is better not to overfill the dough with flour, otherwise the finished dough will be too dense and tasteless. It is better to sprinkle flour on your rolling pin and table when rolling.
STEP 11
Divide the dough into two equal parts. Roll each part into a circle about 2.5 mm thick. Place 1 tbsp on the first layer of dough at a distance from each other. l. fillings.
STEP 12
Cover with a second layer of dough. Press the edges of the dough between the filling together.
STEP 13
Using a glass, cut out even round pieces. Roll out the remaining dough into two layers again and make the rest of the pies in the same way.
STEP 14
Heat vegetable oil in a frying pan over medium heat. It should completely cover the bottom of the pan and reach the middle of the pies. Lay out the pieces and fry on both sides until golden brown. The pies are ready very quickly, so don’t leave the stove. If the oil starts to shoot, cover the pan with a lid.
STEP 15
Transfer the finished pies to a plate and serve. Bon appetit!
