Wash and cut the eggplants into slices, add water and salt. Leave them like this for half an hour, then drain the water.
STEP 3

Place the eggplants in a heated and oiled frying pan.
STEP 4

Fry on both sides.
STEP 5

Meanwhile, cut the tomatoes into slices
STEP 6

Mix mayonnaise and garlic squeezed through a press
STEP 7

Grease the finished eggplants with a mixture of mayonnaise
STEP 8

Place tomatoes on top and garnish with herbs if desired.
