Fried boletus in jars

STEP 1
How to make fried butter for the winter in jars? Prepare the main ingredient - mushrooms. I collected them not in the forest, but at my summer cottage. I cook from boletus, but mushrooms can be absolutely any: boletus, aspen, honey mushrooms. Pay attention to where you pick mushrooms. It is best not to pick mushrooms along the trails, but to go deeper into the forest to collect them. Sort through the mushrooms, remove any debris, and throw away wormy mushrooms without regret.
STEP 2
Wash the oils and clean them if necessary. It is believed that with butter mushrooms you need to remove the top skin from the mushroom caps. I do not do this. Cut large mushrooms into 2-3 parts, leave small ones whole.
STEP 3
Pour cold water over the chopped mushrooms.
STEP 4
Salt the water and let the mushrooms stand for about 15 minutes. If you missed a worm, it should crawl out of the mushroom.
STEP 5
Drain the water, add new water and bring to a boil over low heat. Cook the mushrooms over low heat for about 15 minutes, constantly skimming off the foam.
STEP 6
Then drain the water and place the mushrooms in a sieve.

Rinse well under cold running water.
STEP 8
Heat vegetable oil in a frying pan. It can be of any plant origin, from inexpensive sunflower to elite olive, but it must be refined. Only refined oils can fry anything. Add mushrooms to the pan.
STEP 9
Fry mushrooms to desired doneness. Some people will like more fried mushrooms - their frying time is approximately 20-25 minutes. For medium frying, 10-15 minutes is usually enough. If you don’t have enough salt, add salt to the mushrooms at the very end. While the mushrooms are frying, prepare the jars.
STEP 10
Do not take large jars - from 300 to 500 ml is the optimal size. Wash them well with soda, then sterilize them in any convenient way. I put clean jars of water in the microwave for 10 minutes, then drain the water. But you can sterilize them in the oven at 160 degrees for the same amount of time, or simply pour boiling water into a jar with a metal spoon, leave for 7-10 minutes, then drain the water. Simply boil the lids for 5 minutes.
STEP 11
Place the mushrooms in jars, compacting them tightly. Close or roll up the lids. This preparation should be stored in the refrigerator or in the basement.
STEP 12
A jar of such mushrooms in winter is simply worth its weight in gold. Bon appetit!
