Of course, it is better to use cherries collected in environmentally friendly areas, or grown on your own plot. Sort through the berries, you need to remove garbage, leaves, twigs, rotten berries. Rinse the cherries under running water and place in a colander to drain.

    Place the berries in a metal pan or cup; do not use aluminum cookware to avoid oxidation. Sprinkle sugar on top of the cherries and leave for 6 hours, cover with a paper towel. During this time, the cherries will release juice and the sugar will dissolve.

    After the time has passed, put the pan with the cherries on the fire. Bring to a boil. Reduce heat to medium and simmer for 5 minutes. During this time, be sure to remove the foam that forms on the surface and mix the jam. You need to sterilize the jam jars in advance. This can be done in a water bath - placing the jar upside down on an electric kettle with water boiling inside. Either in the oven or in the microwave.

    You must first rinse the jars of soda with cold running water. The lids of the jars also need to be boiled and dried. Place the hot jam into sterilized jars. Immediately tighten the jars. Turn them upside down and cover them with a warm blanket. This way the jam will continue to sterilize. Let the jam cool in this position at room temperature.

I had collected a kilogram of cherries, but I didn’t want to take out the seeds at all. The recipe for five-minute cherry jam with pits came to the rescue. There are minimal actions, but there are a couple of jars of delicious jam! I used a variety of sour cherries for the jam. But 600 g of sugar per kilogram of cherries was quite enough. The jam turned out sour with a rich taste. With this method of preparation, the syrup turns out liquid with the most “fresh” taste. It can be added to tea or simply diluted with water to make a soft drink. My cherries shrunk a little, but remained soft and juicy, it depends on the variety. It is better not to store jam with seeds for a long time, so I put the jars in the refrigerator for use in the near future. During preparation for making the jam, there was a nuance: during the infusion of the cherries with sugar, little syrup was released. So I added 100 ml. clean water and put the pan on low heat. When heated, the cherries gave juice and continued to cook as indicated in the recipe.

I think that if you plan to keep this jam in the refrigerator, then you don’t need to sterilize the jars and lids...
