If you have fresh tomatoes available, then include them in the ingredients, then the finished dish will be more juicy and aromatic.

    If you have frozen fish, then remove it from the freezer in advance and defrost it at room temperature. Remove the heads and tails, clean the scales and cut off the fins. If the fish is not gutted, then remove the insides as well. Rinse the fish under running cold water and dry with paper towels. Cut the cod into arbitrary medium-sized pieces.

    Peel the onions, carrots and garlic. Wash and dry the vegetables.

    Cut the carrots into thin strips or grate them using a grater with large teeth. Chop the onion as desired, and pass the garlic through a press or finely chop it with a knife.

Pour in a small amount of water (about 60-70 ml) and bring to a boil. Next, reduce the flame, cover the pan with a lid and cook the tomato marinade for about 10 minutes.

    Add fish and cherry tomatoes to the pan. If you have a regular tomato, then first cut it into small slices. If desired, remove the peel from the tomato in advance.

    Mix everything carefully. Add a pinch of black or allspice, cover the pan with a lid and simmer the cod until cooked (it took me about 20 minutes). After a while, open the lid slightly and check if the dish is burning. Add a small amount of boiling water if necessary. Usually the juice from the tomatoes is enough to stew the fish.

I found a wonderful recipe on the site for fish with tomato paste, onions and carrots under marinade. My fish was in the form of a small zander. And for the marinade, I fried onions, carrots and added chopped garlic arrows. Then I added homemade ketchup and fish. I stewed the fish for 15 minutes, during which time I turned the pieces three times to ensure even cooking. I didn’t have tomatoes, but I think there was enough tomato sauce) The only spices I added were a mixture of peppers from the mill. Simmered until the liquid evaporated. Thus, it turned out that every piece of fish was covered with a thick tomato marinade. The fish was literally soaked through and through with the delicious sauce. The dish, although simple, is very tasty!
