STEP 1
How to make eggplants like mushrooms in a frying pan with an egg? Prepare your food. Take medium sized eggplants. If they are large, then increase the number of eggs.
STEP 2
Rinse the eggplants well and dry. Cut off the ends. If the fruit has a thick skin, you can cut it off. The same applies to seeds - it is better to cut out those that are too large. Cut the eggplants into medium cubes.
STEP 3
Break the eggs into a bowl and mix them well with a fork until smooth.
STEP 4
Place the eggplants in a deep bowl, pour in the beaten eggs. Mix the eggplants with the eggs. Try to coat each piece with egg. Leave them to stand like this for at least 1 hour, stirring occasionally. The eggplants should completely absorb the eggs - due to this they will not absorb oil when frying and will remain juicy and elastic. Some recipes advise marinating eggplants overnight.
STEP 5
Peel the onion and cut into small cubes.
STEP 6
After the required time, place the frying pan on medium heat. Heat it up, pour in the oil. Place the eggplant in the egg. Then add the onion. Stir the vegetables and turn the heat to low. Fry the eggplants until cooked for 20-25 minutes. Stir them occasionally.
STEP 7
At the very end, salt and pepper the dish. Do this at the end of frying, as salt will release juice from the eggplants and the appetizer will turn out watery. It will also be delicious to add sour cream and garlic to the eggplants.
STEP 8
Serve fried eggplants like mushrooms at the table. Bon appetit!
