Wash the eggplants, remove the stems. We cut the eggplants into thin circles, the thickness of such circles should be about 0.5 centimeters, the fried eggplants should be moderately meaty. If the pieces are thinner, then the eggplants will turn into a thin film and there will be practically no taste left, if they are thick and poorly fried.
STEP 3
Sprinkle the chopped eggplants with salt; it’s better to rub them on both sides with your hands. Place the eggplant slices in a bowl and add a little cold water. Leave the eggplants for half an hour while we prepare the other ingredients. Peel the garlic cloves from their membranes. Finely chop the garlic with a knife or pass it through a press.
STEP 4
Place a few tablespoons of mayonnaise in a bowl, add chopped garlic and mix. The dressing for the eggplant is ready. Heat the vegetable oil in a frying pan. Place the eggplant slices on it, fry on both sides until slightly browned, the main thing is not to dry out the vegetables, otherwise it will not be very tasty.
STEP 5
Remove the fried eggplant to a plate. If it seems that the vegetables are too oily, then first place the eggplant slices on a paper napkin, let the excess oil be absorbed, and only then put them on a plate. Spread a little mayonnaise dressing on each circle. Sprinkle with fresh herbs. We serve the appetizer to the table.

But despite its simplicity, it is quite filling and tasty, but also high in calories, so those who are watching their figure should not abuse this delicacy.
