STEP 1

How to bake Easter cake without yeast? Prepare the necessary ingredients. The whites should be chilled so they will whip better. Remove the butter from the refrigerator in advance. Turn the oven on to 175°C. Sift the flour into a bowl. This is necessary in order to saturate it with oxygen, which will make the cake more fluffy and tender. Add salt, ground cardamom, baking powder and vanilla powder to the flour.
STEP 2

Beat the whites with a mixer. To do this, pour them into a mixer bowl or other convenient container. The whipping container must be completely dry. Add a pinch of salt. Start beating at low speed with the mixer, gradually increasing the speed. Beat the whites until stiff peaks form.
STEP 3

Beat the yolks with sugar. You should get a white fluffy mass. Stir melted butter into the beaten yolks.
STEP 4

Add dried fruits to the yolk-butter mixture and stir in about 120 grams of flour mixture. Pour in the milk and mix again. Then, one by one, stir in the remaining flour and whipped whites in parts.
STEP 5

Pour the dough into a mold greased with vegetable oil. I used a mold with a ring in the center. You can use a mold without a hole.
STEP 6

Bake the cake for 50-55 minutes in an oven preheated to 175 degrees.
STEP 7

You can check readiness with a wooden skewer or a toothpick: insert a skewer into the cake and immediately remove it. If it is dry, then the cake is ready.
STEP 8

Decorate the cake to your taste. I sprinkled it with powdered sugar.
