STEP 1
How to make dumplings with sauerkraut? First, prepare the necessary ingredients for the filling. Take tasty sauerkraut, preferably home-made, as the taste of future dumplings will depend on this.
STEP 2
Peel the onions and rinse with cold water. Cut into cubes.
STEP 3
Pour vegetable oil into the frying pan. I used olive oil, but you can use refined sunflower oil. Heat well and add chopped onion. Fry with constant stirring for about 6-7 minutes until the onion turns golden.
STEP 4
Squeeze out excess liquid from the sauerkraut well through several layers of gauze or simply with your hands. Add it to the onion in the frying pan. Add 2-3 pinches of sugar. Stir. Simmer over low heat, covered, for about 25-30 minutes. Stir occasionally. Transfer the finished filling into a bowl and leave to cool.
STEP 5
While the filling is cooling, you can knead the dough. Prepare your ingredients. Take the highest grade flour. Sift it to saturate it with oxygen. Eggs and water should be at room temperature.
STEP 6
Beat an egg into a suitable container, add water, 1 table. l vegetable oil. Mix with a fork until smooth and pour into the flour.
STEP 7
Knead a stiff, non-stick dough. Since everyone's flour is different, you may need more or less flour than indicated in the recipe, check the consistency of the dough. Cover with a towel and leave for 40 minutes.
STEP 8
You can form dumplings in the usual way for many. Roll out the dough into a circle, cut out circles using a mold. Or you can roll part of the dough into a sausage 1-1.5 cm thick. Cut it into equal-sized pucks about 6 cm thick.
STEP 9
Next, roll each piece of dough in flour and roll it into circles 1-1.5 mm thick. The thinner the dough, the tastier the dumplings will be. Place about 1 teaspoon in the middle of each circle. l filling and mold the edges. Try not to get cabbage or fat on the edges of the dough, otherwise the dough will not stick together well and the dumplings will fall apart during cooking.
STEP 10
Grease the bottom of the pan with vegetable oil so that the dumplings do not stick to the bottom during cooking. Pour water (about 3 liters) and put on fire. When the water boils, add salt (0.5 tablespoon). Use a spoon to create a funnel in the water and twist in a counterclockwise direction. Place dumplings (15 pcs) into the pan. When they boil, reduce the heat to low and simmer for about 4-6 minutes. The thicker the dough for dumplings, the longer they will cook.
STEP 11
Using a slotted spoon, place the finished dumplings in a colander to drain. Now transfer to a bowl, add butter or fried onions. Serve dumplings with sauerkraut hot with sour cream or garlic sauce. Bon appetit!
