    Combine eggs with sugar in a mixing bowl. Turn on the mixer at the highest power and beat the eggs and sugar into a fluffy, thick mass. The mixing bowl must be dry and free of grease, otherwise the eggs will not beat.

    Add to the beaten eggs, alternately adding sifted flour with soda and vanilla and hot milk with butter. Try to stir by hand with a whisk gently, from bottom to top, so that the mass remains fluffy and airy. You may need more or less flour, take this into account and focus on the consistency of the dough. It should not be too thick, it will look like moderately liquid sour cream.

    Stir poppy seeds into the finished dough. It will quickly spread throughout the dough. The dough should remain airy. It is thanks to well-beaten eggs and sugar that the dough has such volume, and the finished product will be very tender and porous.

    Line the bottom of a springform baking pan with parchment and line the sides. Pour the dough into a mold (20 cm) and place in the oven, preheated to 180 degrees, for 40-50 minutes. Be guided by your oven.

    Remove the finished biscuit from the mold and cool. Then wrap it in film and put it in the refrigerator for several hours to rest. Such a biscuit will be easier to cut and crumble less. It can be cut into 3-4 cakes.

I really wanted to make poppy seed cake layers. I was very interested in this recipe because of its composition and method of preparation. For example, I didn’t even know that poppy seeds can be boiled before adding to the dough. I always just poured it out like that. But brewed poppy seeds are much tastier and softer. And the method of kneading the dough is also interesting) The dough rose well, the poppy seeds were distributed evenly and did not settle. The dough is soft, slightly moist, similar to a cupcake. I’m even thinking about making this crust, pouring chocolate glaze over it and serving it like a pie) The dough turned out very tasty, you don’t even need any soaking. I didn’t have time to track it, but to my surprise it didn’t crumble and even cut very evenly. Wonderful recipe, I will make it again. Thank you, Julia!
