STEP 1
How to make crust dough for a cake? Prepare the necessary ingredients for this. I will make poppy seed cake. If you want a vanilla sponge cake, you don’t have to add poppy seeds. And to get a chocolate sponge cake, add another 2-3 tablespoons of cocoa.
STEP 2
First of all, pour boiling water over the poppy seeds and leave to stand for about 15 minutes. Then drain it into a fine strainer and rinse with cold water. Wait for all the water to drain from the poppy seed.
STEP 3
Separately, combine the butter with milk and put on fire. Bring to a boil until the butter is completely melted.
STEP 4
Combine eggs with sugar in a mixing bowl. Turn on the mixer at the highest power and beat the eggs and sugar into a fluffy, thick mass. The mixing bowl must be dry and free of grease, otherwise the eggs will not beat.
STEP 5
Add to the beaten eggs, alternately adding sifted flour with soda and vanilla and hot milk with butter. Try to stir by hand with a whisk gently, from bottom to top, so that the mass remains fluffy and airy. You may need more or less flour, take this into account and focus on the consistency of the dough. It should not be too thick, it will look like moderately liquid sour cream.
STEP 6
Stir poppy seeds into the finished dough. It will quickly spread throughout the dough. The dough should remain airy. It is thanks to well-beaten eggs and sugar that the dough has such volume, and the finished product will be very tender and porous.
STEP 7
Line the bottom of a springform baking pan with parchment and line the sides. Pour the dough into a mold (20 cm) and place in the oven, preheated to 180 degrees, for 40-50 minutes. Be guided by your oven.
STEP 8
Remove the finished biscuit from the mold and cool. Then wrap it in film and put it in the refrigerator for several hours to rest. Such a biscuit will be easier to cut and crumble less. It can be cut into 3-4 cakes.
