STEP 1
How to cook diet soup for weight loss? Prepare your food. The broth is suitable from any product: vegetables, mushrooms, meat, chicken, fish. You can even take frozen ones. Wash, peel and cut the carrots into small cubes or grate them.

Potatoes are considered a high-calorie vegetable containing starch, so it is better not to abuse them. However, without it, the vegetable soup will seem empty, so a couple of small potatoes can be added to the dish. Wash the potatoes, peel and cut into small cubes.
STEP 3
Zucchini is a low-calorie vegetable, so it will be the main ingredient in a diet soup. It is better to use young zucchini, they contain more vitamins, they are tastier, and there is no need to peel them. Wash the vegetables and cut off the ends on both sides. Cut the young zucchini into cubes, including the skin and core.
STEP 4
Wash the tomatoes; if the skin is hard, remove it. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin. Finely chop the tomato pulp with a knife.
STEP 5
As a healthy addition, you can use fresh or frozen broccoli, green peas, corn, and fresh herbs. I took cauliflower and dill.
STEP 6
Peel the onions and cut into small cubes with a knife. To add aroma and piquant taste, you can add a clove of garlic passed through a press. If you don't like garlic, don't add it.
STEP 7
Bring the broth to a boil. Place potatoes, carrots, onions, tomatoes and zucchini in it. Cook the vegetables for about 15 minutes from the moment they boil.
STEP 8
Then add the cauliflower, herbs and garlic to the pan. Add salt and ground black pepper to taste. Cook for about 15 minutes more. Turn off the heat, let the soup sit for a while under the lid and serve. Bon appetit!
