STEP 1
How to make dessert from cottage cheese and sour cream? Prepare the ingredients according to the list. Which cottage cheese is better to use? It can be of any fat content. But a casserole made from fatty cottage cheese will be tastier. Low-fat cottage cheese can be improved by adding a couple of spoons of sour cream, kefir or milk. Rub the lumpy cottage cheese through a fine sieve or grind through a meat grinder. You should get an airy curd mass.
STEP 2
In a suitable container, beat the egg and sugar with a mixer until light foam forms. Add vanilla at the tip of a knife. Be careful with its dosage; if you add more vanilla than necessary, the baked goods will taste bitter. You can replace it with vanilla sugar (about 1 tbsp.). Chicken eggs should be washed thoroughly before use, as even seemingly clean shells can harbor harmful bacteria. It is better to use food grade detergents and a brush.
STEP 3
Add cottage cheese, sour cream and potato starch. If you use cornstarch, double the amount. Sour cream can be replaced with thick natural yogurt without additives.
STEP 4
Beat everything again with a mixer until smooth.
STEP 5
I took red currants, but you can use any berries, fruits or dried fruits to your liking. Wash the currants and dry on paper towels. Then carefully mix it into the curd mass.
STEP 6
Take a round heat-resistant pan with a diameter of 18-20 cm. Line it with parchment. Sprinkle half the coconut evenly onto the bottom.
STEP 7
Place the curd mixture with currants on top and smooth the surface. Bake in advance (10-20 minutes before cooking) in an oven preheated to 180 degrees for about 45 minutes. How to check the doneness of a casserole? When a golden brown crust forms on top, pierce it in several places with a wooden skewer. If it comes out dry, then the product can be removed from the oven.
STEP 8
Let the baked goods cool slightly in the pan and only then transfer them to a plate. Sprinkle the remaining coconut on top. You can serve with sour cream or vanilla sauce. Bon appetit!
