There is one large egg, but it is better to take two medium ones so that the dough comes together.

    Grate the selected hard cheese on a medium grater. The size of the grater on which the cheese will be grated does not affect the final result. It’s just that if you grate it on a coarse one, then the cheese particles will be more clearly expressed in the finished dish. And for a more uniform consistency, it is better to grate on medium.

    Add eggs and sifted flour and salt to the grated cheese. Knead the dough until it becomes elastic and does not stick to your hands.
