    How to make cutlets in gravy like in a cafeteria? Prepare ingredients for cutlets. I have mixed minced meat, beef and pork. In general, minced meat from any meat is suitable. You can use water instead of milk.

    Peel and chop the onion. For cutlets, I prefer to chop finely - pass through a meat grinder, punch with a blender, grate. But you can just chop the onion with a knife.

    Break the bun and fill it with milk. If the crusts are very hard, it is better to cut them off. After a few minutes, crush the pieces with your hands and turn them over so that the bread is evenly moistened. When the loaf is soft, squeeze the milk out of it.

    Place the minced meat, chopped onion, squeezed bun, salt and pepper into a bowl. Knead the minced meat thoroughly with your hands.

    The minced meat should become absolutely homogeneous and viscous in consistency. You can additionally beat it, then the cutlets will not fall apart when frying. Or add an egg, although they didn’t do that in canteens.

    Heat a frying pan over medium heat, pour vegetable oil into it. With wet hands, form patties and roll them in breadcrumbs. Place the breaded cutlets in the pan. If you are not confident in your dexterity, then first mold all the cutlets and only then put them in the frying pan.

    Fry the cutlets on both sides over high heat until a crust forms.

    Then reduce the heat, cover the pan with a lid and leave for ten minutes so that the cutlets are fried completely.

    While the cutlets are frying, make the gravy. How to make gravy? Prepare your food. Instead of tomato paste, I used pureed tomatoes. You'd better take the pasta, the tomatoes are a little sour. The amount of butter can be reduced to 50 grams.

    Place butter in a heated frying pan and melt it over low heat.

    Working quickly with a whisk, dissolve it into the oil.

    Stir the paste until smooth. The sauce will thicken noticeably.

    Next, while constantly stirring, pour a glass of water into the sauce - the gravy will reach the desired consistency. Add salt and pepper to taste, leave to bubble for a couple of minutes.

I decided to make cutlets in gravy like in the canteen for the child for dinner with mashed potatoes on the side (impressed by the photo). I made the minced meat myself from chicken fillet with the addition of onions and buns in milk. From the spices I added salt, and instead of pepper I added ground coriander. The minced meat came out excellent, homogeneous and dense. I made cutlets and rolled them in breadcrumbs, fried them until golden brown over high heat as recommended by the author. Afterwards I kept it under the lid according to the author’s advice. Then I made the gravy separately. I used a little less butter according to the author’s advice. I didn’t add pepper, but I was still preparing it for the child) The sauce with tomato paste and flour turned out delicious, thick due to the flour and very aromatic. I poured the sauce over the cutlets and the magical dish is ready. Incredibly tasty, aromatic and juicy cutlets in gravy were obtained according to this recipe. Katya, hello! The cutlets are good as in the cafeteria, I really prefer to simmer them a little at the end, but there is a delicious gravy here! Almost all our tomatoes are sour, I balance the taste by adding a little sugar, and it always helps, even overcooking it into borscht. You’re so great, the video recipes are getting better, you’ve almost solved the lighting problem, the kitchen and dishes are perfectly clean, it’s very nice to watch.
