Cutlets according to GOST

Tasty and filling cutlets, correct according to GOST! Every person has probably had the opportunity to dine at a catering establishment at some time in their life, and it should be noted that in almost all canteens the cutlets taste the same. And everything is correct, because in normal public catering organizations they must prepare dishes in accordance with the standards, norms and rules set out in GOST, where there are requirements for raw materials, cutlet composition, cooking method, storage conditions and others. Despite such formality and apparent strictness, in fact, preparing cutlets according to GOST is not at all difficult, and many housewives, without even thinking about the standards, make cutlets according to all the rules set out in them.

  1. STEP 1

    STEP 1

How to make cutlets according to GOST? Prepare the ingredients according to the list. Place white bread or loaf in a bowl. Fill it with water to swell it. You can pre-dry the bread or loaf in the oven and grind it into crumbs; the standards provide for both of these options.

  2. STEP 2

    STEP 2

Add minced meat, prepared yourself or purchased ready-made from a trusted manufacturer, salt and ground black pepper to a bowl with bread, mix the mixture.

  3. STEP 3

    STEP 3

Stir the minced meat for cutlets for quite a long time, because this affects the density and quality of the finished cutlets, which is provided for in the requirements. According to GOST, onions are not included in the cutlets, since it is believed that dishes with onions spoil faster, but if cutlets seem to you tasteless without onions, you can add an onion.

  4. STEP 4

    STEP 4

With your hands soaked in cold water, form cutlets, by weight: 50, 75 or 100 grams. Bread the cutlets in flour or breadcrumbs on all sides.

  5. STEP 5

    STEP 5

Pour vegetable oil into the frying pan. Warm it up. Fry the cutlets over medium heat for about 10 minutes on each side, until golden brown.

  6. STEP 6

    STEP 6

Then, if the frying pan has a removable handle (if not, then transfer the cutlets to a greased baking sheet), send it with the cutlets to the oven, preheated to 200 degrees, for another 20 minutes. The cutlets are ready according to GOST. Of course, the cutlets will turn out much tastier than such a dish from the canteen. Serve the cutlets to the table, optionally with a side dish or fresh vegetables and herbs. Bon appetit!

The cutlets are great! Tasty, juicy, just what you need. I also like to add carrots to the minced meat. It also complements the taste very well.
