Curry with rice

Step-by-step preparation
STEP 1
How to make curry with rice? Prepare the necessary ingredients. Basmati rice can be replaced with good steamed long grain rice. I have chicken broth, but vegetable broth will do as well. Ghee is a good alternative to butter.
STEP 2
Rinse the rice several times in cold water. Change the water until it becomes clear. This way we will remove starch substances from the grains, and the finished rice will turn out crumbly. Place the rice on a clean cloth to dry.
STEP 3
Cut the pre-peeled onions into small cubes. Also peel the garlic and cut into slices. If you want garlic to be present in the finished dish, grate it on a fine grater.
STEP 4
Peel the ginger root, grind it on a fine grater or finely chop it.
STEP 5
Heat the butter in a frying pan. Here you can add fresh curry leaves and fry them until translucent and crispy, then remove from the pan. They will give the oil additional taste and aroma. Place chopped onion in the pan. Over medium heat, stirring occasionally, fry the onion until half cooked, about 5 minutes.
STEP 6
Sprinkle with spices: curry, ground coriander, pepper and salt. Fry, stirring frequently, to allow the spices to release their aroma. When adding spices, use your own taste, reducing or increasing the amount.
STEP 7
Add garlic and ginger. Cook, stirring, until fragrant, about 1 minute. Remove the garlic cloves from the pan. If it's grated, stir in the onion and ginger.
STEP 8
Place washed and dried rice in the pan. Stirring constantly, fry the grains in aromatic oil for 3-4 minutes.
STEP 9
Pour broth over rice. Determine the amount of liquid based on the cooking recommendations on the cereal package. I prepared according to a ratio of 1:1.5 (1 part rice and 1.5 parts broth). The rice should be completely covered with broth. Increase heat and bring rice to a boil.
STEP 10
Cover the pan with a lid and cook the rice over low heat until the liquid is completely absorbed, about 15-17 minutes. The rice should be soft, but not overcooked.
STEP 11
Leave the rice, covered, on the stove off for another 5 minutes. Gently stir the finished rice, collecting it from the sides of the pan towards the center.
STEP 12
When serving, you can garnish the curry with rice with chili rings, parsley or cilantro and, if desired, fried cashew nuts. Bon appetit!
