STEP 1

How to bake cottage cheese rolls from puff pastry? Prepare all the necessary ingredients. Let's start by preparing the filling.
STEP 2

Take the raisins, place them in a bowl, pour boiling water over them and leave for 5 minutes. Then drain the water, rinse and dry the raisins.
STEP 3

In a bowl, combine cottage cheese, egg, sugar and vanillin. Take the vanillin at the tip of a knife; a larger amount can add bitterness to the finished dish. You can also replace it with vanilla sugar. Mix everything thoroughly with a spoon or silicone spatula. If your cottage cheese is grainy, then first punch it with a blender or rub it through a sieve. This will make it more tender and uniform.
STEP 4

Add raisins and lemon zest to the curd mixture. First wash the lemon with a special fruit detergent or soda, dry it and grate the colored part of the skin on a fine grater.
STEP 5

Stir again. The filling is ready. Set it aside for a moment; we will need it in the next steps.
STEP 6

Take puff pastry without yeast for the rolls. However, if such dough is not available, you can also use puff pastry. And also, if desired, you can make puff pastry yourself.
STEP 7

Defrost the dough first, roll it into a rectangular layer, but not very thin.
STEP 8

Place the filling on the dough and spread evenly over the entire surface, leaving 2 cm free along the long edge to secure the rolled roll.
STEP 9

Roll the dough into a log and place it seam side down.
STEP 10

Using a sharp knife, cut the roll into pieces no more than 4 cm wide.
STEP 11

Use milk and nuts to decorate the top of the rolls. I used walnuts, but you can use any: hazelnuts, pecans or peanuts. If you have whole nuts, then you need to grind them in a blender or other convenient way.
STEP 12

Place the resulting rolls on a parchment-lined baking sheet, seam side down. Brush the surface of the rolls with milk. Sprinkle with ground nuts. Place the baking sheet in the oven preheated to 180°C and bake for about 30 minutes until golden brown. The times are approximate, be guided by the operating characteristics of your oven.
STEP 13

You can serve the finished rolls immediately or completely chilled. The next day they are no less tasty than the day they were prepared. It is better to store the rolls in a tightly closed bag. Bon appetit!
