STEP 1

How to make a cottage cheese roll? First, prepare the ingredients for the sponge cake. It’s better to take soft cottage cheese, mine turned out to be a bit dry, and the dough was difficult to knead. I took corn starch, you need to add more of it. Turn on the oven to 190 degrees in advance.
STEP 2

Divide the eggs into yolks and whites. Place the yolks, half the amount of sugar, flour, starch, baking powder and vanilla sugar in a bowl. Stir.
STEP 3

Add cottage cheese and stir everything until smooth. This is where I regretted that I took regular cottage cheese. The mass turned out to be thick.
STEP 4

Beat the egg whites with the remaining half of the sugar. I didn’t beat until it formed strong peaks, on purpose so that they would remain liquid and thin out the thick batter. If your dough is liquid, then beat the whites with a mixer until stiff peaks form.
STEP 5

Gently fold the whites into the dough. To do this, stir it with a spoon, as if folding, from bottom to top.
STEP 6

As a result, the dough turned out to be the desired consistency.
STEP 7

Pour the dough onto a baking sheet lined with parchment paper and smooth it out with a spatula to form a rectangular layer about 1 cm thick.
STEP 8

Bake the sponge cake in a preheated oven at 190 degrees for 20-25 minutes. Focus on the appearance, it should turn golden.
STEP 9

Quickly remove the biscuit and place it on a pre-spread towel. Without hesitation, roll it into a tight roll. Some people manage to do this with just paper; I only succeeded with a towel. Leave the roll to cool in this state.
STEP 10

Prepare the necessary ingredients for the cream. For jam, I advise you to take some sour version, it will highlight the sweetness of the cream.
STEP 11

Mix all ingredients.
STEP 12

The cream should be homogeneous.
STEP 13

Remove the paper from the cooled roll. This is done without any problems, the dough is absolutely not sticky. Carefully unroll the roll, being careful not to break it, and spread it with an even layer of cream.
STEP 14

Roll the roll and turn it seam side down. Grease the top and sides with cream as well. Place the roll in the refrigerator for an hour to soak. Using a fork, make a pattern on top and decorate as desired. The ends can be cut off evenly before serving, it will be more beautiful. Bon appetit!
