    Divide the eggs into yolks and whites. Place the yolks, half the amount of sugar, flour, starch, baking powder and vanilla sugar in a bowl. Stir.

    Add cottage cheese and stir everything until smooth. This is where I regretted that I took regular cottage cheese. The mass turned out to be thick.

    Beat the egg whites with the remaining half of the sugar. I didn’t beat until it formed strong peaks, on purpose so that they would remain liquid and thin out the thick batter. If your dough is liquid, then beat the whites with a mixer until stiff peaks form.

    Gently fold the whites into the dough. To do this, stir it with a spoon, as if folding, from bottom to top.

    As a result, the dough turned out to be the desired consistency.

    Pour the dough onto a baking sheet lined with parchment paper and smooth it out with a spatula to form a rectangular layer about 1 cm thick.

    Quickly remove the biscuit and place it on a pre-spread towel. Without hesitation, roll it into a tight roll. Some people manage to do this with just paper; I only succeeded with a towel. Leave the roll to cool in this state.

    Prepare the necessary ingredients for the cream. For jam, I advise you to take some sour version, it will highlight the sweetness of the cream.

    Remove the paper from the cooled roll. This is done without any problems, the dough is absolutely not sticky. Carefully unroll the roll, being careful not to break it, and spread it with an even layer of cream.

Light, airy and delicious cottage cheese roll and very easy to prepare! I added a little more flour, less starch and cottage cheese to the dough. And there is some extra cottage cheese left in the filling, so you can safely leave most of it in the dough. The cream does not leak out, but soaks in well - I really liked it. Added strawberry puree to the cream and garnished with frozen berries. I baked it on a silicone mat and rolled it up. You can even add whole berries or candied fruits to the filling - it will be interesting. I liked the recipe and recommend it.
